Water in El Burgo, as in the rest of the Sierra de las Nieves World Biosphere Reserve, is the very essence of life. Through irrigation ditches and springs, it has sustained the people of El Burgo, their livestock, and their crops, as well as their small rural industries. Among these, the water-powered flour mills stand out; using the force of the water, they turned the waterwheels that set the millstones in motion, grinding the wheat into flour—which became the “fuel” of the countryside: our daily bread.

At the foot of El Burgo, below its Miraflores Castle and alongside the Turón River, a beautiful and peaceful walking path has been created next to an irrigation ditch that once carried water to a flour mill known as “La Fábrica de Harina.” This promenade combines a vibrant riverside landscape, with its flora and fauna, and the historical legacy of water culture represented by the irrigation ditch and its mill.
